Stigmas of SaffronStigmas of SaffronSaffron is a precious spice obtained from the stigmas of Crocus sativus, delicate purple-red threads renowned for their intense aroma and distinctive, slightly bitter taste.

Saffron cultivation in the Florentine Hills has a long and fascinating history. Once known as “zima di Firenze”, it was a highly prized spice, traded and appreciated throughout Europe. During the Middle Ages, Florence was an important centre of saffron production and trade, attracting merchants from across Europe. Saffron was not only used to flavour and enrich food, but also served as a valuable form of exchange.

Today, this ancient tradition has been rediscovered by local farmers, particularly in the hills of Mugello, where the sunny climate and well-drained soils provide ideal conditions for cultivation. The bulbs are planted between August and September; in autumn, the flowers are carefully hand-picked and the delicate stigmas separated one by one before being dried.

The result is a highly prized product that brings together history, landscape and agricultural tradition.

In the heart of Mugello, Vicchio is known as the “City of Saffron”, a place where this ancient crop has become a precious expression of the area's identity, heritage and traditions.
